Bamurru Plains is Australia’s answer to the Okavango Delta, located on a 300km² of private buffalo station, just west of the Kakadu National Park on the Mary River floodplains. Bamurru invites guests to share in a profusion of bird and wildlife right on their doorstep in a unique bush camp that exudes ‘Wild Bush Luxury’ and brings a touch of style to the discovery of a remote and beautiful wilderness.

Airboat safaris are one of the best ways to explore this wilderness, skimming across the floodplain watching tens of thousands or birds take flight, or slowly cruise down the Sampan river looking for crocodiles along the bank. Guided walks and open top 4WD safaris will take you out to the further reaches of the property on the lookout for wild brumbies, dingoes or a perfect Top End sunset to watch while enjoying canapés and a sundowner drink.

Nine Safari Bungalows built on stilts overlook the floodplains, with mesh-screen ceiling to floor walls, provide a truly unique experience in which you can hear, see and almost touch the wildlife and wilderness around you.

Wild Tastes of the Top End Safari - Gather & Dine with James Viles - 18 to 21 May 2017

Wild Bush Luxury and James Viles, owner and chef of two hatted Biota Dining & Rooms in New South Wales, have joined forces to create an exclusive food safari at Bamurru Plains on the edge of Kakadu to not only highlight the importance of eating locally, seasonally and conserving the natural environment but also offer guests a truly immersive, Australian culinary adventure.

Drawing inspiration from the Top Ends bush pantry, James will develop a Bamurru menu of local ingredients, textures and flavours that exist alongside each other in nature. From wild boar and wallaby to tea tree and heather berries, the menu will reflect the local area, sourcing and using only what is needed to deliver a delectable experience. Every dish tells a story. Every plant. Every seed. Every animal.

It is this menu that will form the basis of the three-day Wild Tastes of the Top End food safari hosted by James at Bamurru Plains between 18 to 21 May 2017. The interactive itinerary will take guests deep into the property, including foraging and gathering alongside James followed by cooking demonstrations and a wild bush masterpiece at the chefs long table, hosted by James himself. All of this combined with the classic, indulgent touches and warm hospitality synonymous with Wild Bush Luxury.

The three day James Viles Food Safari at Bamurru Plains will be held from 18 to 21 May 2017 and costs AUD $3490 per person, with single supplement of $995. The price includes two nights accommodation in one of the properties ten luxury safari bungalows, guided wildlife and safari experiences, all meals and beverages, a bespoke tastings menu developed and presented by James Viles and a copy of his new book Biota: Grow, Gather, Cook.
